Chef  Spotlights: A Culinary Tour Through Our Kitchens

If you’ve ever wandered through Kargo and thought, “How am I supposed to choose?” Congratulations, you’ve experienced the correct emotional response. With 19 kitchens under one roof, we’re basically a culinary obstacle course, except the only thing you’re competing with is your own appetite.

So instead of giving you a neat list (boring), I’ve grouped the standout dishes by vibe. Because food isn’t organised by postcode… It’s organised by cravings, chaos, comfort and the occasional identity crisis.

Comfort Kings

Some dishes don’t need to shout. They win you over with warmth, nostalgia and the flavour that feels like coming home.

Take Renata’s Rigatoni Bolognese, slow-braised until the beef melts into a rich tomato base, listed with garlic, olive oil, and parmesan.

 

Nearby, Inamo Sukoshi’s Katsu Curry simmers with a golden warmth. This is a Japanese classic that wraps you in its mellow, velvety sauce.

 

And for those who crave simplicity done right, Sunrise Caribbean’s Pepper Steak and Rice delivers exactly that: tender steak, fluffy rice, and a peppery kick that never goes out of style.

 

Of course, comfort has its indulgent side too. What’s your Beef’s award-winning cheeseburger, yes, crowned Manchester’s Best Burger by Calfreezy (read all about it here), is a triumph of beef, American cheese, pickles, onions, ketchup, and mustard.

 

And if you’re the kind of person who believes hash browns are a food group, the loaded long-neck hash browns and stacked grilled sandwiches mastered by FEED feel like destiny.  

The Spice Masters

Then there are the dishes that stride with heat, boldness, and attitude.

Dan Dan Noodles are a Bang Tang classic for a reason: Sichuan spice, spring onions, and beef tangled through the noodles, carrying every ounce of flavour. It’s the kind of dish that wakes you up in the best way.

 

Bab K’s Fried Chicken Bibimbap brings Korean comfort with a fiery twist:  crispy chicken, kimchi brightness, gochujang heat, and a rainbow of vegetables layered over rice. It’s valanced, beautiful, and quietly addictive.

 

If you prefer your spice with a side of crunch, Bok Bok’s Buffalo Chicken delivers bite-sized heat with Cajun fries or fluffy rice.

 

And from the heart of House of Habesha’s Kulwa Keyh (part of their full house platter) brings a signature spicy lamb sauté that’s rich, aromatic, and unforgettable.

The Global Feast

Our Food Partners span continents, and nowhere is that clearer than in the dishes that carry heritage, memory, and cultural pride.

Maba’s Great Indian thali is a feast in every sense. Curries, warm naan, basmati rice, a crispy samosa, golden onion bhaji, and poppadoms that crackle at the touch.

 

From East Africa, House of Habesha also serves the Full House Platter – a journey across Eritrean and Ethiopian flavours: soft, tangy injera, sizzling shekla lamb, slow-cooked Kulwa Saida, fiery Kulwa Keyh, and spicy chicken tibs. It’s a dish best shared, though no judgment if not.

 

That Ziki’s Chicken Gyros brings street-food energy with rustic pita, oregano fries, and your choice of chicken, halloumi, or vegan fillings.

 

+84’s Bahn Mi layers a crisp baguette with marinated meats, picked vegetables, and zesty herbs… A Vietnamese classic with a modern twist.

 

And then there’s Musakhan, a national Palestinian dish created by Baity. This is served with a story from the chef himself (see here) that deserves every bit of its spotlight.

The Showstoppers

Some dishes don’t just taste good. They perform.

Drip & Drizzle’s Kinder’ella Bubble Waffle: ice cream, Callebaut chocolate shavings, Kinder Bueno pieces, and a Kinder egg perched on top. It’s playful, indulgent, and impossible not to photograph.

 

Leopard Pie’s Famous Honey Butter Rings are no less dramatic: a glossy swirl of green garlic butter, mozzarella, spiced ‘nduja, parmesan, and chilli honey.

 

And for something refreshing, the Mango Milk Tea from Boba Cha offers fruity sweetness, smooth tea, and the chance to build your perfect topping combination.
